Needed

…Festive sweaters for Eric and the boys, to keep with our tradition of receiving them for Christmas. Shouldn’t be tacky, but should be wintery and patterned (think Nordic snowflakes, etc.). Need to be obtainable in time.

…A clear-cut plan of exactly what we and everybody else will doing for the holidays. Pretty sure we’re heading for West Virginia at some point, but where and when? And my folks are talking about driving down to see us, details predicated on those other details. And where will my brother be?

…A New Year’s race in West Virginia. (I don’t think Santa’s got one of those for me in his bag. :( )

…The satisfaction of having my shopping done, minus the actual work of having done it. (Please, Santa? )

…Two dozen cookies for Gabe’s preschool party, and an appetizer for a holiday party I’m attending myself. I’m thinking I probably shouldn’t try to get away with buying something unless things get fairly desperate.

…A way for Eric and me to attend two different events at the same time on Wednesday night (not that our individual conflicts with choir practice are even for the same event, either).

…More coffee. Always more coffee.

…An unseasonal heat wave, so that I don’t have to spend chunks of Christmas break deciding between running in the dark or on a treadmill. I’m not strongly enamored of the jogging stroller, with a bike rider in tow, but at least it would be another option, and one I can’t do in snow and ice.

…Your favorite interesting cocktail recipe. Comment bonanza!

If you like hot buttered rum, this is going to rock your socks!!!

    Hot Buttered Rum Batter

    Ingredients:

    1/4 pound butter
    1/4 pound brown sugar
    1/4 pound confectioners’ sugar
1 cup vanilla ice cream, softened
    3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (definitely use fresh if you have it)

Melt butter in a large pot over medium heat. Blend in brown sugar and confectioners’ sugar.

Remove from heat, and whisk in the ice cream, cinnamon, and nutmeg.

Pour mixture into a plastic container, seal, and freeze.

In a coffee mug, measure 1 tablespoon Hot Buttered Rum Batter and 1 fluid ounce of rum, then fill cup with boiling water. Stir, and sprinkle top of drink with nutmeg.

This yields 25 servings, and is 78 calories per serving, 4.5 grams of fat. I have no idea if that includes the rum, but I doubt it.. Also, you can sub apple cider in place of the water with incredible results. You can also omit the rum altogether if you use the cider, for the boys. :)

I generally quadruple the recipe for the entire Fall/Winter season, for a nice hot treat when friends come over. The whole thing takes about 15 minutes to make and is soooooooo worth it!

You know, there must be some teenager around you that you know (and trust) that LOVES to shop – especially with someone else’s money. Why not hire them for an afternoon to get all your Christmas shopping done? I used to do in-home childcare for a developmentally disabled young adult and I would do as much shopping for the holidays for her mom as possible. Just a thought…. :)
