Meatless

Eric’s been struggling with diabetes issues lately. To make a long and complicated story short, the things he’s been trying aren’t working very well anymore, and something has to change. The paths remaining to him are starting to shrink in number, unfortunately. I was commiserating with him this morning; it’s about all I can do sometimes. Then I mentioned a possibility that occurred to me, and it seems it’s one he’s considered lately, too.

Myself, I don’t eat nearly as much meat as I once did. In fact, I’ve unconsciously moved to a place where I usually eat only a small portion of it, once a day, if even that often. Eric eats more; his meals at work often have meat, and his favorite splurges are meat – wings, for example. I proposed to him that he cut back to once a day, and he suggested going to once a week. Okay, I can work with that.

Today he forgot and accidentally had some grilled chicken at lunch, but dinner was meatless. I roasted cauliflower, made fresh guacamole, and curried some beans, peppers, and onion (which somehow turned out drastically WRONG until Eric got home and saved it with a few alterations). It was a satisfying meal; it even worked out okay for the boys, who ate the cauliflower and quickly-assembled quesadillas. Now Eric’s at the gym, which also seems to provide an immediate blood sugar lowering effect. I don’t know what he’ll do tomorrow; Tuesdays, he plays Scrabble at a bar with friends, eating wings for dinner there. I don’t think there’s an extensive vegetarian-friendly menu, unfortunately. I forgot to ask him about that.

Anyway, it’s not a huge change for the family, in most regards, but it’ll be something to consider. Thank goodness the Farmers’ Markets will be opening up again soon!

    Vegetarian is definitely easier when the markets open! We’re doing gardens again this year and I’ve told the kids to brace themselves for lots of stir fry and steamed veggies. I’m trying to significantly cut back on the amount of processed foods that goes into us!

    I’d love to have some of your favorite recipes!

    I roast most of my veggies. Oh, the natural sugars that come through! Yum!

    Thanks for sharing your podcast. Could relate to the dogs not on the leash thing. One time this dog attacked me and the owner laughed at me. I often yell even in the early morning and embarrass the owner by telling them in a loud voice to go back to your owner. Just because it is early it is not an excuse to not have a leash on your dog.
